Oatmeal pancakes with tuna

Ingredients

2 cans of Calvo easy-pour tuna in olive oil
1 avocado
100g mushrooms
Quail eggs
1 lemon
Salt
Pepper
Pancake batter: 100g oat flour
1 egg
160g milk
1 tsp baking powder
30g cane sugar
2 tbsp extra virgin olive oil

Delicious tuna pancakes topped with an original recipe featuring avocado, mushrooms and quail’s eggs – you’ll be coming back for more once you’ve tried them.

  1. For the pancake batter, mix all the ingredients together, whisk until smooth, then leave to rest for 15 minutes.
  2. Heat a non-stick frying pan over a medium-high heat, brush the base of the pan with a little extra virgin olive oil and add a ladleful of batter. Cook until bubbles form on the surface, then flip over, cook for a few more seconds and remove from the pan.
  3. Continue until all the batter is used up, then set aside, covered with a cloth.
  4. Slice the mushrooms thickly, season with salt and pepper and cook in a frying pan.
  5. Scoop out the flesh of the avocados and mash them, add salt and lemon juice, mix and set aside.
  6. Fry the quail’s eggs in a non-stick frying pan with a drop of oil and salt.
  7. Spread the avocado over the pancake, place the mushrooms on top, then another pancake on top of that; repeat once more, and on the final layer, place the avocado, the grilled quail’s egg and the tuna.
