Tuna burger with broccoli

Ingredients

3 cans of Calvo easy-pour light tuna in olive oil
150g broccoli
1 egg
50g rolled oats
150g onion
Salt
Pepper
2 cloves garlic
Olive oil
Hamburger buns
Tomato
Lettuce
Gherkin
Sweet potato

Preparation

30 minutes

Drain the tuna. Meanwhile, cook the broccoli florets in plenty of salted water, then drain thoroughly.

Chop the onion and garlic, fry gently in a tablespoon of oil until softened, then transfer to a bowl. Add the finely chopped broccoli, oats, egg, salt and pepper, mix everything together and leave to cool in the fridge. Once the mixture is cold, shape into burgers.

Cook the burgers on a griddle or in the oven and serve with your favourite toppings, on this occasion, with lettuce and a mixture of chopped tomato, gherkin, spring onion and coriander, served with mustard, ketchup, mayonnaise or yoghurt sauce, and sweet potatoes cut into strips and roasted in the oven with thyme, salt, pepper and a drizzle of oil.

Tip: this is a great way to sneak vegetables into meals for the little ones; you can swap the broccoli for cauliflower or other vegetables – depending on what you use, you’ll need to cook or sauté them beforehand.
