Step-by-step guide to tuna and smoked fish tartare!
- Cut the tomato into four wedges, remove the seeds and set them aside in a bowl
- Cut the rest into very small cubes
- Meanwhile, chop a clove of garlic and mix it with a little salt, extra virgin olive oil and the seeds using a fork or whisk
- We need to ensure the mixture is smooth, like a vinaigrette
- Finely chop the spring onion and capers (brunoise)
- Cut the slices of smoked fish into squares of approximately 2 cm and mix them with the spring onion, capers, tomato and the garlic emulsion prepared earlier
The presentation of the tuna and smoked fish tartare is just as important as its flavour!
Serve the dish on tableware that contrasts with its colours: a neutral base will make the ingredients stand out.
